Chimichangas

I have not had chimichangas for years — mostly because they are usually fried when they are cooked and I’ve had to avoid fried foods because of my IBS. When I got my Emeril Lagasse Air Fryer, this is one of the first recipes that I tried … These chimichangas taste so good and they were a huge hit with my family!!

These are also great to make ahead of time. After assembling the chimichangas, wrap them in wax paper and store in the refrigerator. When ready to eat, remove the wax paper and cooked the chimichanga in the Air Fryer.

Note: This recipe can be modified to be “Arbonne 30 Day Approved” by using organic chicken, organic salsa, organic refried beans, dairy free shredded cheese and gluten free tortillas.
