Peppers with Hummus
Looking for better snack options? Try sliced peppers with hummus! I love the red, orange and yellow peppers — those are “sweeter” peppers than the green ones. I like to dip them in hummus. The brand Sabra has an organic hummus — most grocery stores, Costco, Wal-Mart and Target carry this brand. There are lots of other brands of hummus — you’ll want to look for the word “organic” and it should be OK. If you have any questions, comment below and I can take a look at it and let you know.
I also like to dip these peppers in guacamole. Homemade guacamole tastes the best but this is also something that is easy to pick up at the store.
I like to get these from Sam’s Club — they are single serving containers. Not everyone in my family likes guacamole and once it is opened, it can turn brown in a couple of days so I like to get these smaller ones.
Peppers and hummus or guacamole is a quick and easy snack to pack for school lunches and/or to take to work. We also like to take this on vacation, camping, at the lake, horse shows and sporting events. It will stay fresh in a cooler.
This is also an easy snack to prepare when you have unexpected company or when you need a quick “side dish” to take to someone’s house. (You can stop by the store on your way there and then cut up the peppers when you arrive — everyone will think you purposely waited so the peppers would be freshly cut.) When you get the different colors of peppers, it makes a pretty display and it will be a crowd favorite!
